Hello everyone! Greetings from Austin, Texas!
This past week I spent attending SXSW EDU and taking in the beautiful sights of Downtown Austin, as well as eating lots of fantastic food. Fun fact- University of Texas at Austin has their own in-house vertical farm that provides fresh greens for students who dine on campus. After harvesting over 200 pounds of produce, UT Austin estimates that their vertical farming system takes up 90% less space and uses 90% less water than a traditional farm. Isn't that awesome?
